Our roasting profile for Panama results in a medium bodied, clean tasting cup. The finish is very smooth with notes of almonds. These beans are delicate and require extra concentration when roasting.


The Janson family has owned the land for over one hundred years but just recently started cultivating it for coffee. La Torcaza sits on the Pacific Ocean side of the country and has a perfect climate for growing coffee beans.

    Far Too Dark A Roast

    I find it interesting that HHoC describes the roast for Panama as “medium,” as I find it beyond dark and well into the severely overroasted category. I am trying to remember having coffee that was roasted as dark and strong as this, but come up empty. This stuff is almost undrinkable, and completely obscures the delicate nature of the Panama beans. I would say it is a generous 1 1/2 stars out of 5, so I’ll grudgingly round up to a 2.
