Dragonwell is one of the Ten Famous Teas of China; authentic Dragonwell must come from the West Lake region of Zhejiang. The leaves are noted for their flat, sword-like appearance—this is the result of careful pan-firing by hand in hot iron woks where quick pressing motions of the tea makers’ hands flatten and shape the leaves as they toast. Skilled teamakers know just how long to press the leaves to develop a lightly nutty, toasty flavor.
