Learn why there's no difference in caffeine levels from a dark or light roasted coffee.

The chemical structure of caffeine doesn't get altered until over 1,000 degrees Fahrenheit. So the roast profile (light or dark) doesn't actually affect the amount of caffeine found in the coffee bean.

However, light roasts tend to weigh more because they are denser, and when making a cup of coffee, we tend to use more coffee by weight with a light roast than a dark.
